For centuries the Augustinian monks have been brewing a particularly fine-tasting form of a dark beer favoured in these parts, sharing their delights with all in the neighbourhood who cared to join them. Thus fortified, they were able to continue the quest for nourishment of a more spiritual kind.
Although their St Thomas beer is no longer brewed on the premises, guests to the Augustine Hotel today can sample it in the Brewery Bar, an atmospheric space (complete with 17th-century stalactites and stalagmites) that has been carved into the cellar as part of a huge transformation of the monastery by the Rocco Forte group.
